Ethereal Brewing is a brewery and taproom on Manchester Street in Lexington's Distillery District. It sits on the 25-acre site of the old James Pepper Distillery, which made bourbon from 1879 and sat abandoned after 1958. Ethereal was the second business to open on the revived property.
Andrew Bishop found his calling while visiting an uncle who ran a small brewery in Northwood, Iowa. He partnered with Brandon Floan, who loved the science of brewing.
Sours are a big part of the list. Muffin Man, a blueberry muffin sour, began as a small batch and became a flagship because regulars insisted. Wanderland West Coast IPA and Throwback, a classic American pilsner, are regulars too.
The bar also pours batched cocktails, ciders, seltzers and a long bourbon list. The website says Ethereal is dog friendly and family friendly. It is one of the most reviewed beer spots in Lexington on this site.
