Blue Stallion Brewing Co. is a Lexington brewery built on boldly traditional German ales and lagers. Five founders, Kore Donnelly, Nico Schulz, Xavier Donnelly, Jim Clemons and Zac Donnelly, hatched the idea in the winter of 2012, and the brewery opened in 2013. The website says its beers follow traditional techniques in line with the Reinheitsgebot, the German beer purity law.
The tap list marks four beers with a star: a Czech Pils, a Dunkel, a Hefeweizen and a Helles. Seasonals and specialties run from Doppelbock and May the Schwarz Be With You, a schwarzbier, to the Donnelly Irish Red. The newer side covers hazy and American IPAs, sours and barrel-aged beers.
