Fermentery Form is a small artisan brewery in West Kensington, Philadelphia, on Palethorp Street. Its own website says every beer is made by mixed fermentation, co-fermented with a house mother culture instead of yeast bought from a lab. It calls this an old way of brewing that is being made new again.
A central piece of its production is an oak barrel stack, a pyramid of barrels holding beer of different ages in oak from around the world. The brewery draws on that stock to blend beers with its own house character. Some batches ferment and age in wine barrels, and all spend time in contact with oak.
Its beer program has included wine grape blends under the name Origins, made with grapes like Grenache and Sangiovese, alongside one-off releases in its Informal series. Every beer is bottle and cask conditioned through a short second fermentation, which its website says lets them be kept and enjoyed for years. A Petite Selection is also listed on its site in 750ml and magnum bottles.
