Right Bee Cider is a cidery and taproom in the old Schwinn bike building on Chicago's northwest side. Its website calls it Chicago's first cidery. Husband and wife Charlie Davis and Katie Morgan launched it in 2014.
It began with a birthday gift. Charlie made Katie a hard cider as a surprise, and the cidery grew from there.
The cider starts with fresh-pressed American-grown apples, fermented dry with champagne-style yeast. Some batches add fruit, spices or honey from the rooftop beehives. The website says everything is crisp, refreshing and never too sweet.
The taproom pours a rotating draft lineup of limited release and classic ciders. Food is bring your own. Babies and dogs are welcome.
