Dovetail Brewery is a taproom and brewery in Chicago's Ravenswood Corridor and North Center area. Its website says it specializes in continental European styles and traditional methods. The motto is "We brew like monks (minus the vows)."

The Core 4 lineup includes a Hefeweizen and a Kölsch. The Hefeweizen is made with double-decoction, open fermentation and a coolship rest. The Kölsch is served daily by the stange, and a Kranz holds 11 of them.

Google calls the taproom a chill place to sample house-brewed beers in a vast space. Food is bring your own, and the site says food pop-ups usually run Thursday through Sunday. Montélimar pretzels are on offer on weekends.
