Ology Brewing Co [Tampa] is the Tampa taproom of a Tallahassee brewery and distillery, on North Florida Avenue. It pours both beer and spirits. Ology runs three more taprooms in Tallahassee.
The name points to science. Founder and head brewer Nick Walker grew up in a family of Florida State University researchers. His grandfather, Lloyd Beidler, studied the science of taste, and his father studied smell.
The tap list runs from IPAs to stouts, sours and barrel-aged beers. Sensory Overload is a hazy IPA dry-hopped with Citra, Spa Goggles is a gose with cucumber, lime and pink Himalayan sea salt and Italian Pilz is a crisp lager.
On the spirits side, Ology makes potato vodka, a London dry gin, a New World gin with local satsuma and a white rum from Guatemalan molasses. Bourbon and rye come as small batch blends, and there is even a birthday cake cream liqueur. Walker started Ology with longtime friends Paul Woodward and Brian Clark.
