About NewSylum Brewing Co.
NewSylum Brewing Co. is a brewery and taproom on the historic Fairfield Hills campus in Newtown. It fills the restored former Stratford Hall, part of the old hospital grounds the town bought from the state in 2004. The brewery says its Hoppla dark wheat lager won a bronze medal at the 2024 Great American Beer Festival.
Head brewer John Watson makes a wide range of styles. The tap list has included a witbier, a German pilsner, a double IPA, a cream ale, an Irish dry stout and a schwarzbier. There is also wine on draught, hard cider, hard seltzer and non-alcoholic beer.
Food comes from a wood-fired oven. Hand tossed 10 inch pizzas are always available, along with a giant Bavarian style pretzel and cheese and charcuterie boxes. Gluten-free pizza is available on request.
Wednesday is dart night and Thursday is trivia, and live music plays most weekends. Leashed dogs are welcome outside, and the taproom sells four-packs of cans to take home.
