Citizen Brewers is a brew on premises facility on Mission Gorge Road in San Diego. Instead of pouring beer made elsewhere, it lets you brew your own batch on professional equipment with staff guiding you the whole way. New or experienced, the shop designs the process to be personal and fun.
You can choose from a list of house recipes, covering styles like kolsch, hefeweizen, pale ale, hazy IPA and Belgian triple, or bring in your own recipe or ingredients. Sour and barrel aged beers are available too, with a consultation before you brew. Each batch is made with natural ingredients and yields about 90 to 100 cans or one 50 liter keg.
The process runs over several weeks: you brew your batch, then it ferments and conditions on site before you return to can it. You can also design your own labels for the finished cans. The tasting room is open to the public on Saturdays, and walk-ins are welcome for tasting whenever the shop is brewing.
Citizen Brewers also works well for groups. Each kettle serves up to six brewers, and with eight kettles running, the shop can host bigger groups for parties or team events.
