Zymarium Meadery calls itself Orlando's first meadery, and it pours more than 20 meads on tap on North Mills Avenue. The meads run from dry to sweet and from traditional to modern, and all are gluten-free. Local beer, curated wine, seltzers and non-alcoholic drinks are on draft too.
Joe Leigh has made mead since 2014 and, according to the website, has won six Mazer Cups. Ginger Leigh, known for her Synthestruct light and art installations, designed the tasting room and the brand. Together they run Zymarium with help from partners and family.
The honey comes from local sources, usually within two hours of Orlando. It is never heated, and it stays unfiltered, like the meads. The meadery applies modern wine and beer science to bring out how different each honey tastes.
Outside food is welcome. After 6 p.m. it is 21 and over only, and only service animals are allowed. Bottles are sold for local pickup or shipping, and the meadery also books events.
