About Cellarest Beer Project

Cellarest Beer Project is a brewery on Haywood Road in West Asheville. Its website says it makes farmhouse inspired ales and lagers, fermented in wooden barrels. The site dates the project to February 2020.

The name blends cellar and rest. The website calls it a synonym for barrel aged, and a nod to the person who watches over a cellar. Founder and head brewer Mark Goodwin first dreamed up the brewery in 2011, while brewing in Portland, Oregon.

The site says the beer is made with North Carolina malted grain and is gluten reduced. It describes three types of wood used for fermenting, lagering and aging. It also says the brewery has captured wild yeast and bacteria from the West Asheville neighborhood.
