Cerebral Brewing - West Highland is a brewery taproom on Lowell Blvd in Denver's West Highland neighborhood. Cerebral opened it with its friends at Outside Pizza. The website describes a spacious taproom, a sunny patio and a mezzanine in 4,000 square feet.
Cerebral started in 2015 in Denver's Congress Park neighborhood. Its website says the team is passionate about foeder fermented lagers, imaginative IPAs and a large barrel-aging program. It has run an in-house QA/QC lab since day one.
The West Highland tap list is sorted into lager, hoppy, hard seltzer, fruited sour, wild ale, barrel aged, guest taps, non-alcoholic and gluten free. Pizza is part of the setup here.
