White Labs Brewing Co - San Diego is a taproom on Candida St. It sits inside the yeast factory that has made brewer's yeast since 1995, and White Labs opened the brewery here in 2012. The goal was to show how different yeast strains change the same beer.
The taproom's Scientist Series takes one base recipe and splits it into two batches with different yeast strains. Tabberer IPA comes as a West Coast-style version and a hazy version, and Louis P Lager, Hansen Hefeweizen and Pasteur Porter get the same treatment. The menu rotates, and most beers are tested to keep gluten under 20 parts per million.
Google also lists the taproom as a beer hall and pizza restaurant alongside its brewery tag. No reservation is needed, kids can tag along, and well-behaved service animals are welcome. If you are skipping the beer, there is a rotating selection of sodas, kombucha and coffee.
